Random Head Thoughts

Hello friends!
Last week was Josh's birthday and we celebrated by going to IHOP for breakfast, seeing Harry Potter (awesome!), then having his birthday cake (a Publix red velvet cake with their amazing butter cream frosting), then enjoying a nice evening of sushi with a friend. Last weekend we had two days off together so we ate more (MORE!) sushi, more than any one person should consume in one sitting! It was yummy. We have a new-found love of sushi! Saturday we went up to Charlotte to South Park mall. If you don't know South Park, it's a mall for the rich people of Charlotte. It has a Tiffany's, a Louis Vuitton, a Lacoste, a Tommy Bahama (awesome clothes there), and basically all the rich store by designers. They also have a California Pizza Kitchen, which is the BEST pizza! It's Josh's fav restaurant, so we went there and met my BFF from college Gabby and her hubby Dennis for a great dinner.

Other than all that, the past two weeks have been pretty uneventful. I work usually 5 days a week (no set days other than always Sat and Sun) and usually two of those days I work doubles. I have to say, I really am very happy with my job. I am slightly concerned about the money. I had been making really great money, but it's tapered off. I seem to be getting 10% all the time now. And I know I am doing a great job (the guests tell me this!). I've been at the place for 2 months-ish now, and I'm doing good, less errors, know the menu better, giving better service. So why the drop in money? I should be making MORE.

I added two more classes to my fall schedule at Midlands Tech. A religion course and a philosophy course. The 5 classes I'm taking will transfer over to USC and to my major. If all goes well and everything transfers correctly, it looks like I will be graduating in December of 2013. Sounds good to me!! I'm way too excited and anxious right now. I feel USC with accept me, but part of me still is fearful of being denied...

Other than that...

Set your DVRs! Tomorrow night begins Shark Week! Thursday night is the premier of Jersey Shore in Italy! And, Monday begins AMC's Mob Week, which will be showing some of the best movies ever (hello, The Godfather!)

The goal is to be near goal weight by the time I start Carolina (fingers crossed) on January 9, 2012. This gives me about 5 months. Can I lose 9 pounds a month? I think so!

I love lists.

Things I Am Not Fond Of

1. Sharks. If evolution is real, sharks will eventually evolve from using their fins to swim to using them the fly. This is a certainty. One day a great white shark will swoop down from the sky and bite my head off.

2. Bugs. Spiders. Creepy crawlys. I realize God put these "creatures" here for a purpose (bugs feed spiders, spiders feed birds, birds feed sharks, sharks rule the world). However. I believe the birds should just switch full time to seeds and pine cones and nuts and berries. And dead things. And leftover Twinkies. Also, sharks should not exist.

3. Waiting. I don't like it. I make decisions and then am ready to start acting it out. But sometimes I have to wait on outside factors. Such as USC deciding if they will admit me. What if they do not?

4. Sheep. Useless. Harbingers of death and despair.

5. Shrimp/shellfish that taste funny or like iodine. I have a very sensative palate to iodine. I taste it in tap water. This freaks me out.

6. Midlands Tech/their nursing department/the HBIC of the nursing department. I reserve the same judgement for these things as I do for sharks. And sheep.

7. Slime. Nothing you eat should be slimy. Okra? Slimy. Don't eat it. Slugs? Bad meat? Bad veggies? Gross.

8. Mean people. At what point in time did it become socially acceptable to be mean, rude, uncouth? It is not only accepted, but esteemed by our society to be a bitch or an asshole. How is this ok?



Things That Make Me Go "YAY!"

1. When sharks eat sheep, then die from botulism.

2. When mean people are eaten by sharks, who then spontaneously combust.

Some recipes are a complete waste of money...

My Weight Watcher's Cookbook had an appealing recipe along with a lovely picture to entice all the fatties. The recipe is called Pappardelle with Shrimp. Apparently, pappardelle is the elitist name for what here in reality call "egg noodles." So. Recipe includes: pretentious noodles, olive oil, garlic, shrimpers, dry white wine, chicken broth, eggs (oh yes, we will explore this in detail), parm cheese, pepper, and mint. Yes, mint. To start with, I omitted the wine (why waste money on something like that? Dry white wine? Bleck.) and the mint, because, well, mint? Really? Yech. Then I decided there needed to be some veggies, so I added to this recipe portobella mushrooms, zucchini, and fresh roma tomatoes.

I was a little bit excited. Then I wasn't. Here's why:

1. the shrimp I got? Not peeled. So after cooking them I had to peel them while they were still hot. No me gusta.
2. The mysterious eggs? Following the directions to a T (or a t), I proceed to add the egg, parm, and pepper mixture at the appropriate moment, only to have my eggs immediately scramble. Nice. Dirty looking bits of scramble aborted chicken fetuses are now sticking to all the shrimp and veg. Gross to look at. Gross to eat. The more you know!
3. My extra healthy veg additions? The zucchini became mush. The mushrooms were good, but not enough. And the tomatoes were a bust.

Overall? LAME. If you get a wild hair (hare?) and decide to make this crap, I mean "dish,"
1. Omit the eggs. There is no logical reason to put eggs in this.
2. Don't overcook you zucchini.
3. Ignore my tomato suggestion. More mushrooms!
4. Pasta, the shrimpers with veg. No broth.
5. Buy a pizza from Little Caesar's instead and be happy you are not on a diet (I mean "way of life").

The Most Wonderful Time of the Year

A list.

1. I've been on Weight Watchers for almost a week now. I lost like 6 pounds in the first 3-4 days. Now my scale is steady between a two pound range for the past 3 days and no more loss. Yes, I realize the first 6 pounds were "water" weight. I also realize it would be unreasonable and unhealthy to expect to continue to lose weight at an average of over a pound a day. However! This is annoying! I saw so much success, and now nothing. 3 days isn't long. But it gives me self-doubt. I feel like I have been very disciplined and on it. Drinking lots of water. Staying in my points with good choices (aka, not eating 33 points worth of doughnuts and calling it a day... which by the way would be 6 and a half original Krispy Kreme doughnuts). So what's the deal? There probably is no deal. My weight loss is evening out to healthy level after the initial jump start from starting.

2. If I lose 2 pounds a week, I can be at goal (down 50 pounds for those of you who don't like the math) in 6 months. Skinny at Christmas! Thank you baby Jesus!

3. I hate Midlands Tech. I have no interest in nursing or health care.

4. I'm going to transfer to Carolina and get my BA in History. Why history? I love history. What will I do with history? Maybe teach. In my perfect utopian fantasy, I get my master's. I then teach at a prestigious university (aka, anything NOT Midlands Tech) a wonderful educating and life-changing course called "History 321: Tudor History.' It will be amazing. In reality? I don't know, ask me in a year.

My favorite salad

This is the most delicious entree salad. Ever. Weight Watchers friendly.

Ingredients

1 6oz sirloin steak per person (all visible fat should be trimmed off)
28g feta cheese
portabella mushrooms
roma tomatoes
fat free raspberry vinaigrette
bag of spring mix salad

Grill the steak until medium rare (for the best flavor) or your preference. Let steak rest 5 minutes. Slice steak into strips.
Saute the mushrooms
Slice, dice, chunk, or whatever to the tomatoes.

Combine all ingredients. Have a happy tummy.

Just another Day

I have insane foot pain. I may only work 6 hours or so on average each shift, but that entire time is spent on my feet. No sitting, none. Not only do my feet hurt like the devil, now I have blood blisters/bruising patches on my heels. My very glorious madre just purchased me some orthotic shoes with inserts because apparently I have a high arch. Too bad the shoes are just as painful and now rub blisters on my achilles. Also, supposedly non-slip? LIARS. I'm going to bust my butt with these things on.

Weight Watchers is going excellent. Already down 6+ pounds. Six more pounds and something very exciting will happen...

One of my favorite lower point meals is chicken fajitas. You can eat a lot of them! You just have to pick out good tortillas, the low-carb ones are the best. Tried the Smart One's Ziti with Meatballs and Cheese today. Good, filling. Tastes like normal fattening ziti. Not my favorite though. I believe this is due to the sauce. I am a fan of Prego and if it's not Prego, it's not awesome.

Not much else to report.

Except...

Tip your servers 20%. If they sucked, don't, but also complain. How do problems get fixed if no one ever knows about them? If they were awesome leave more. I made an $2.13 hour. I need my tips to pay my bills. Leaving $5 on a $50 check is NOT OK. If you can't afford to tip, you can't afford to go out to eat. Stay home, cheap ass.

Nothing much to report today. Ate leftover pork. Yum. Pretty uneventful day. Still going strong. Yee-haw.

Just ate a new Smart Ones Chicken with broccoli, cheese, and rice, and cheesy cheese sauce.... Linkum... YUM. Doesn't taste diet to me! It comes in a bag. Check it out here.

Day One... Again.

I decided to be bulimic once when I was in high school. I stuck a toothbrush down my throat, then decided that was a bad idea. I started Atkins at the end of summer before my senior year. It worked. I lost like 40 pounds. I kept it all off too. Ironically until after my beer and liquor loving days of college. Then I slowly gained. I was up 15 pounds when I met my current boyfriend Josh 3 and a half-ish years ago. I was up another 25 pounds a year later.

Then, last summer, I was up another 36 pounds. That's 61 pounds in just those 2 and almost a half-ish years. Things were out of control. I joined Weight Watchers with Josh last summer. I lost 25+ pounds by last October-ish. Then quit. Gained back a couple pounds. Started Weight Watcher's online in January but didn't commit. So since January I gained oh like 5 pounds. But from my history, I know I will just gain and gain until I'm a blimp. So I restarted Weight Watchers today.

Why is this time different? I have no idea. Even back in January I was so committed to sticking to it, knowing I could be down 25 pounds easy by summer. But here we are again. Day one of the rest of my life! Day one of my new diet! Day 100 is more like it. I've been on and off diets since I was like 15. I've probably lost 500 pounds through it all. But so I start again.

I'm really pumped about. I love Weight Watchers. It's practically fail proof if you stick to it. You can eat everything you love to eat. You don't have to erase entire food groups. No counting calories. Or counting carbs. I count points. I get 34. Whether I use points of broccoli or on a steak, it's up to me. And I can eat steak. And bagels. I just count my points.

Today was exciting. I usually hate to cook. But I decided to give it a whirl today. Pork tenderloin. Marinaded for 2 hours in orange juice, orange zest, jalapeno pepper, cumin. Roasted in the over with those little potatoes. Served with green beans. And what do you know? It was fracking delish! Perfectly tender and juicy pork! Great flavor, with some nice heat from the pepper.

I'm excited. I can't wait to cook my next meal!

Anyways. Welcome to my blog. It will mostly contain my Weight Watcher's stuff (recipes, my goals, my progress). But I suppose it will also deal with other stuff... work... school. Life.
